Ingredients:

  • 3 oranges
  • 2 cups cooked macaroni
  • 2 cups cooked broccoli
  • 1/2 cup celery (chopped)
  • 1/4 cup green onion (chopped)
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt

Method:

  1. Squeeze one orange for the juice. Peel the other two and dice the flesh. Grate some orange rind.
  2. Place grated orange rind, orange juice, olive oil, and salt in a big bowl and blend together.
  3. Add diced orange, broccoli, celery, green onion, and macaroni. Gently stir them.
  4. Cover the bowl with cling film and cool in the fridge, then serve.

Tips:

Macaroni, however, is one of low GI foods (other examples are multi-grain bread, brown rice, spaghetti, etc.) that will release glucose gradually into the bloodstream and let the body to sustain energy levels for longer periods of time.
