Ingredients:

  • 240 grams pork fillet
  • 80 grams walnut kernels
  • 3 tablespoons fermented bean paste
  • 1 tablespoon rice wine
  • 3 tablespoons vegetable oil

Seasonings:

  • 1 egg white
  • 1 teaspoon salt
  • 1 tablespoon potato starch (or cornstarch)
  • 1/2 teaspoon sesame oil

Method:

  1. Toast the walnut kernels in a moderate hot oven for later use. (A healthier option than toasting them in hot oil though it also works.)
  2. Dice the pork. Stir in the seasonings and marinate for 20 minutes.
  3. Heat the oil in a wok. Cook the pork until meat is tender, then drain and remove.
  4. Reserve 2 tablespoons of oil in the wok.
  5. Add fermented bean paste and cook gently.
  6. Sprinkle in wine.
  7. Return the pork and toss to coat with sauce.
  8. Toss in the walnut kernels, and serve hot.
