Ingredients:
- 240 grams pork fillet
- 80 grams walnut kernels
- 3 tablespoons fermented bean paste
- 1 tablespoon rice wine
- 3 tablespoons vegetable oil
Seasonings:
- 1 egg white
- 1 teaspoon salt
- 1 tablespoon potato starch (or cornstarch)
- 1/2 teaspoon sesame oil
Method:
- Toast the walnut kernels in a moderate hot oven for later use. (A healthier option than toasting them in hot oil though it also works.)
- Dice the pork. Stir in the seasonings and marinate for 20 minutes.
- Heat the oil in a wok. Cook the pork until meat is tender, then drain and remove.
- Reserve 2 tablespoons of oil in the wok.
- Add fermented bean paste and cook gently.
- Sprinkle in wine.
- Return the pork and toss to coat with sauce.
- Toss in the walnut kernels, and serve hot.
